One Pot Meals
Beef Stew from the Bayou
3 lb.Beef Chuck, cubed 1 CupWhite Onion
1/3 CupFlour 1 Pkg.Beef Broth
1/4 CupVegetable oil 3 CupsNew Potatoes, halved
Celery Carrot cubes 3 CupsCooked rice
Coat beef with flour. In lg.non-stick pot, brown beef with oil over med-high heat. Remove beef. Add onions & mushrooms to pot & saute for 6 min. Add garlic, continue cooking for 1 min. Pour off fat. Return beef to pot & stir in tomato sauce & broth. Bring to boil.
Reduce heat, simmer beef until tender (1 1/2 hrs). Skim off any foam. Add carrots. potatoes & green beans. Cover partially, simmer for 15 min. In small bowl, mix corn starch & cold water; stir into stew. Increase heat & boil uncovered for 1 min.
Salt & pepper to taste. Garnish with parsley & serve. Flavorful options: Hot pepper sauce, 1 Bay leaf, 1 Tbsp. Worcestershire sauce, 1 C. sliced green onions
