One Pot Meals
Tuna Nicoise Fusilli
1 CupFennel, diced 2 Med.Red pepper*
1 CanBlack Olives, halved 1 Sm JarCapers
2 CupsGreen Beans, cooked 1 Pkg.Mint leaves, chopped
2 CansTuna 1 Pkg.Fusilli
Combine fennel, red pepper, tuna, olives, green beans, capers, mint & 2 Tbsp of olive oil. Season with salt & pepper. Cook fusilli pasta until just tender - al dente. Drain well & add to tuna & vegetable mixture. Serve room temperature.
*To roast red pepper, place on foil at 375*F until skin is charred black. Place in paper bag & seal for 15 min. (steam).. Remove charred skin, core & seed.
