One Pot Meals
Radiccio & Roquefort Fettucini
3 Tbsp. Olive Oil/Shallots 4 oz.Roquefort cheese
8 oz.Assorted Mushrooms 2 Tbsp.White wine
1 HeadRadiccio, sliced 1/4 CupFresh Parsley, chopp
1 Tsp.Red Pepper Flkes To tasteSalt & Pepper
In lg. skillet heat oil (med. heat). Add shallots & red pepper - cook until tender (4 min). Add mushrooms - cook 5 min. Add wine and reduce mixture by three--quarters (2-3 min) Remove from heat & add herbs, lemon zest & juice. Toss until radiccio has wilted.
Prepare fettucini per pkg. directions & add, along with gorgonzola, to sauce mixture. Salt & pepper to taste. Serve with tomatoe wedges or a light salad if desired.
* Gorganzola Cheese substituted if desired. ** Wine Vinegar substituted if desired.
