One Pot Meals
Greek Bulgar Salad with Shrimp
3 Tbsp. Lemon juice/Olive oi 1/2 HeadLettuce, shredded
1/2 lb. Plum Tomatoe/ Cucumb 1/2 Lg.Red Onion, chopped
1 CupBulgar Wheat 1 CanBlack Olives, choppe
1 lb.Shrimp, cook peel 1/2 CupFeta cheese, crumble
In small bowl, whisk lemon juice, olive oil* (mustard & oregano). Set aside. Place Bulgar in a large bowl. Stir in 2 cups boiling water. Cover with plastic & let stand for 5 min. Stir in tomatoes, cucumber * (parsley & mint) & 2 Tbsp. of lemon dressing.
Cover & refrigerate 1 hr. Toss cooked shrimp with 1 Tbsp of dressing & set aside. In a large bowl toss together lettuce, onio, olives & remaining dressing. Serve with bulgar, shrimp & feta.
*Optional: 1/4 Cup ea. chopped Parsley/Mint & 1 Tsp. ea. prepared Mustard/fresh Oregano. Salt & pepper to taste.
