Corned Beef Dinner
4 lb.Corned Beef Brisket 6 Sm.Carrots
1/2 CupOnion, chopped 6 WedgesCabbage
2 ea.Garlic cloves/Bay le 1 Tsp.Prepared Mustard
6 Med.Potatoes 3 Tbsp.Brown Sugar
Place meat in dutch oven; add water to cover (about 7 cups). Add onion, garlic & bay leaves. Cover & simmer 3-4 hrs or until tender. Remove meat. Add potatoes & carrots to cooking liquid. Cover & bring to boiling (5 min). Add cabbage.
Cook 5 min more until vegetables are tender.
Optional: Place meat fat side up in shallow pan. Spread with mustard. Sprinkle with sugar & cloves. Bake in 350* oven 15 min. Serve meat with vegetables & liquid.
