One Pot Meals
Chicken Noodle Soup
2 lb.Chicken, bones remov 1 PkgEgg Noodles
5 stalksCarrots/Celery 1 Med.Onion, chopped
1 Pkg.Chicken Broth
3 Tbsp.Chicken Bouillon To tasteSalt & Pepper
In lg pot (dutch oven) boil whole or half chicken until tender - remove bones & fat - chop chicken into bite sized pieces. Meanwhile, chop celery & carrots. After skimming any fat, add vegetables, canned chicken broth & chicken bouillon, to pot.
Bring to boil, lower heat & simmer until vegetables are firm but tender. Add egg noodles - cook al dente, add chicken back warming thoroughly.
Serve with saltines or oyster crackers.
